Sambal Goreng Raya

Ingredients:

To sauté

  • 15 shallots
  • 6 cloves garlic
  • 2 red chilis
  • 2 green chilis
  • 2 inches ginger
  • 2 inches galangal, smashed 
  • 6 lemongrass stalks, smashed
  • ½ cup dried shrimp, soaked in hot water and drained
  • 50gm dried chili, cut diagonally and thinly with scissors
  • 2 tsp turmeric powder

To boil and dice

  • 180gm beef lung
  • ½ kg beef liver
  • 200gm heart
  • 200gm tripe
  • ½ kg beef
  • 2 cups water

To fry

  • ¼ cup palm sugar (gula Melaka)
  • 2 cups water mixed with 3 tablespoons of Nutrilite Soy Protein drink
  • 1 tbsp tamarind paste
  • 3 pieces tofu, diced
  • 1 piece tempe, diced
  • 200gm prawn, cleaned
  • 15 stalks long beans, cut diagonally into thin slices
  • 2 pieces dried tofu, soaked and chopped
  • ½ packet glass noodles, soaked and chopped
  • 3 tsp salt
  • ½ cup cooking oil

Method:

  1. Fix the reversible shredding disc to the Philips Food Processor HR7776.
  2. Add the garlic cloves, shallots, red chilis and green chilis through the funnel and push them into the bowl with a spatula.
  3. Change the accessory to the adjustable slicing disc. Slice the ginger by inserting it through the food processor funnel and pushing it in with a spatula.
  4. Heat the oil in a wok. Sauté the sliced garlic, shallots and thinly sliced ginger until the ingredients wilt.
  5. Fix the PowerChop blade to the food processor and chop the dried shrimp.
  6. Add the dried chili to the sautéed ingredients. Then add the chopped shrimp.
  7. Sprinkle turmeric powder into the wok.
  8. Add the galangal and lemongrass. Lower the heat.
  9. Preheat the Philips Premium Digital Airfryer HD9741 to 180°C. Airfry the lungs, liver, tripe, heart and beef separately for four minutes each.
  10. Airfry the tempe and tofu at 190°C for 5 minutes.
  11. Add all the fried ingredients into the wok and mix evenly.
  12. As the fried items cook, add water little by little whenever the fried sambal dries up.
  13. Add the Nutrilite Soy Protein mixture.
  14. Season with salt and palm sugar.
  15. Once the liquid in the wok boils, add the tamarind juice.
  16. Add the dried tofu and glass noodles.
  17. Finally, add the prawns and long beans. Mix till all the ingredients are cooked well.
  18. Serve with ketupat or lemang.
