Okinawa-Style Stir-Fried Goya and Tofu

Ingredients (for 2 persons):

  • ⅓ pc goya (bitter gourd)
  • ¼ pc tofu
  • 10ml Plant To Table by Nutrilite White Chia Seed Oil
  • 1 tbsp kelp stock or kombu dashi
  • Scallions, julienned
  • Salt
  • Pepper

Method:

  1. Cut the goya in half lengthwise, remove the seeds and cut into 3mm-thick slices.
  2. Rub the goya slices with salt for 30 seconds and leave for 10 minutes. Rinse the goya with pure water and drain with a kitchen paper towel.
  3. Cut the tofu into thick slices.
  4. Heat up a pan with the White Chia Seed Oil and stir fry the tofu. Add in the goya and stir fry till soft.
  5. Season with kelp stock/kombu dashi, salt and pepper.
  6. Transfer to a bowl and garnish with the julienned scallion before serving. Dig in!
